History Of Absinthe

In the second-half of the 18th century, the first recipe of absinthe was created in "Val de Travers"(Switzerland) which today is known as Swiss canton Neuchâtel. In Switzerland evidence of wine being mixed and drunk with wormwood dates 1737. Absinthe is very traditional distilled beverage. It's alcohol differs between 42% - 89,9%. Traditionally it is an anise and fennel flavoured spirit derived from herbs, including and most important the flowers and leaves of the herb "Artemisia absinthium", also called "wormwood". Though Absinthe is usually anise flavoured, producers recognised that the demand of anise-free Absinthe exists and partial they've also began to move away form their traditions to please their costumers. Also it's interesting to know that Absinthe became illegal in Switzerland on 7 October 1910, 1912 Absinthe was banned in the United States of America and in many European states. Reasons for the ban were, that it was said that it would cause several illnesses and because it was declared as a dangerously addictive psychoactive drug. They blamed the chemical called "thujone", which Absinthe contains in a small amount to be addictive.
However, since the ban, there were still distillers which produced absinthe undercover/illegally. Because of the ban, the Suisse “La Bleues" was unavailable in the shops and had to be sold under the table.
One of these famous bootleggers is Claude-Alain Bugnon; he was the first to receive an official license to legally produce absinthe once it became legal again. 1998 Absinthe had its revival because most of the European states began to reauthorize its manufacture and on the 1st February 2005 Absinthe was legally produced again in Switzerland. The legalization occurred, because absinthe was vilified, although there never was any evidence that have proven that absinthe is any more dangerous than other spirits. Its psychoactive characteristics, apart from those of alcohol have been overstated in the time it was declared illegal.
Famous Absinthe-Drinkers were:
Vincent van Gogh, Ernest Hemingway, Oscar Wilde, Henri de Toulouse-Lautrec, Charles Baudelaire, Paul Verlaine, Arthur Rimbaud and Aleister Crowley.
So now you might get a little idea what Absinthe is about. On one site it's about traditions, but on the other hand it's about breaking traditions.
So, how should you drink Absinthe?
The following drinking rituals are the most famous ones.
Suisse ritual
Traditionally (in Switzerland) Absinthe is drunk "mixed" with water (first about 2cl (0.68 fl. Oz.) Absinthe is poured into a glass and then water (the triple amount of the Absinthe) is slowly added sometimes through fountains and sometimes through a decanter.
French ritual
In France it's almost the same, but there is one huge difference. First a Absinthe-Spoon is placed on a glass. On that spoon you put one to two pieces of sugar. Then Absinthe is poured into the glass and the water slowly over the sugar, in the same relation as the Suisse ritual. (one part Absinthe, three to four parts water). Once the water is completely filled into the glass, the sugar is added and stirred with the spoon.
Czech ritual
Nowadays the way the Czech drink their Absinthe is growing popularity. Like the French they place one to two pieces of sugar on their Absinthe-Spoon and then they pour Absinthe over the sugar. The Absinthe soaked sugar is then lightened up and burns until the sugar
is caramelize. Water is then poured over the caramelized sugar and the sugar is stirred with the spoon.
But aside the rituals many cocktails began to get popular like Ernest Hemingway’s "Death in the Afternoon" cocktail, in which iced Champagne is mixed with Absinthe. By now there are even Absinthes that are intended to be drunk pure on ice, so you could say all in all Absinthe has many faces which keeps it so interesting.
